Qatayef with Cream Recipe

- FOR THE DOUGH:
- Flour 450 g
- Fine Semolina 240 g
- Baking Powder 3 teaspoons
- Instant Yeast 1 ½ teaspoons
- Sugar 3 tablespoons
- Salt ¼ teaspoons
- Water 750 ml and (300-375) more for thinning
- Milk 375 ml
- FOR THE FILLING:
- Cottage Cheese (‘Qareesh’ Cheese) 800 g
- Nestlé® Sweetened Condensed Milk 1 tin(370g)
- Rose Water 2 tablespoons

To make the dough, take a large bowl, in which you add the sifted flour as well as the semolina, baking powder, yeast, sugar, and salt. Then, mix them with a whisk.

Add the milk and water and manually whisk the batter until it comes together. It should be runny.

Cover and set aside in a warm place for 20 minutes.

To make the filling, take a large bowl in which you mix the Qareesh (cottage) cheese, Nestlé® Sweetened Condensed Milk, and rose water with a spoon until the mixture comes together. Make sure you break any big any cheese chunks apart in the process.

Place in the fridge until it’s ready to use.

Right before you cook the Qatayef, add in 300 – 375ml of water to thin the dough.

In a non-stick pan, cook the Qatayef dough, scooping about 3 tablespoons at a time.

Cook on medium heat, making sure you see holes in the dough as it bakes. Do not flip it over.

When the dough is no longer glossy, remove the cooked Qatayef and place them on a clean towel.

Cover the Qatayef immediately with the same towel and let them cool down for 5 to 10 minutes.

As soon as the Qatayef cool down, fill them with the cheese mix and seal them from one side, pressing firmly with your fingers.

Garnish the Qatayef with crushed pistachios or pomegranate seeds and keep them covered to stay soft.
