Arabic Coffee Cake with Dates

From Nestlé® you will need

Nestlé® Sweetened Condensed Milk 370g

From the kitchen you will need

  • Nestlé® Sweetened Condensed Milk 370g - 1 tin
  • Nescafé® Instant Coffee OR Nescafé® Instant Arabic Coffee 1 tablespoon (dissolved in 2 tablespoons of hot water)
  • Dried dates Chopped,200-g
  • Ground Cinnamon (5g) 1-tsp
  • Unsalted butter (150g)
  • Baking soda (5g) 1-tsp
  • Baking powder (5g) 1-tsp
  • Vanilla essence (5g) 1-tsp
  • Wheat flour 1¼ cup (175g)
  • Eggs 2
  • Pistachio 20-g crushed for garnish

Step by Step

  • Stone and chop dates and place them in a bowl with 100 ml of boiling water. Leave for about 30 minutes until cool and well-soaked, then mash a bit with a fork.

  • In a bowl, mix Nestlé® Sweetened Condensed Milk with the eggs, then add the date mixture and the dissolved coffee. Mix well and set aside.

  • In another bowl, mix the butter, baking soda, baking powder, vanilla, cinnamon and wheat flour until well combined. Add this to the flour mixture and mix to combine it all together.

  • Pour the mixture into the prepared baking tray. Bake in a preheated oven at 175°C for 40–45 minutes, or until a skewer inserted in the middle comes out clean.

  • Once the cake cools down, sprinkle with crushed pistachios.
