Mafroukieh Pistachio Recipe

- For the Pistachio Mafroukeh
- Pistachio 325 g
- Nestlé® Sweetened Condensed Milk 397 g
- Tea Biscuits 100 g
- Rose Water 30 ml
- Blossom Water 15 ml
- For the Kashta
- Water 1 liter
- Nestlé® Sweetened Condensed Milk 397 g
- Corn Flour 150 g
- Blossom Water 10 ml
- Nestlé® Cream 170g 170 g
- To Garnish
- Oriental White Cotton Candy 120 g
- Ground Pistachio Grinded 20 g
Step by Step

For the Pistachio Mafrouka
-
In a food processor, grind the pistachios and biscuits, finely (Powder texture), add the Sweetened Condensed Milk / Rose water and Blossom water and blend them well until well combined and you have a paste texture.

For the Kashta
-
In a bowl, whisk together the milk and corn flour until all corn flour dissolves in the milk. Set Aside.

In a pot, mix the remaining milk and the Nestlé® Sweetened Condensed Cream together and bring the mixture to a boil.

Once the milk is boiling, add the milk and corn flour mixture and keep whisking until cream is thickened.

Put the mixture in a deep flat tray and leave to cool and set for 2 hours.

In a food processor or hand mixer, blend the cream until soft.

Form a ball of 30 g from the Mafrouka paste.

Place the ball in a serving dish and with a small spoon start pressing the center of the balls to make it look like a flat cup.

Using a piping bag, fill in the cups with Kashta.

Garnish with white oriental cotton candy and grinded pistachio.
